Pizza Bowl

Sometimes dinner needs to be super simple, and that’s where pizza bowls come in. Usually I prefer to make as much of my meals as possible from scratch, but having quality pre-made items on hand is a real lifesaver, especially when cooking is the last thing you want to do. Items we  always have on hand are organic olives, jars of Raos marinara and ground meat. These staples can make a quick meal of meat sauce over rice noodles or zoodles, pizza, or  like last night’s dinner, pizza bowls.

To prepare I warmed 1.5 c marinara in a sauce pan and added cooked meatballs, then we ladled the sauce and meatballs into a bowl and topped with chopped pepperoni (I always buy Applegate brand), sliced black olives and shredded goat mozzarella.

The meatball recipe is pretty simple:

  • 1 lb organic grass-fed and finished ground beef
  • 1/4 c almond meal (great substitute for bread crumbs)
  • 2 cloves garlic, minced
  • 1/4 c fresh parsley, chopped
  • Salt and pepper

Mix all ingredients by hand and form into meatballs. Bake at 375 for 22-25 minutes.
