It has been raining all morning (not sure if you can see the rain pouring from the roof and into the pool) and the weather called for something comforting for lunch today, which came in the form of a grain-free minestrone soup from Against All Grain (Meals Made Simple book). I did not have any celeriac or potatoes to add a starch so it is more like an Italian vegetable soup with ground turkey…still good though! This soup is made in the crock pot which is awesome since it is easy to whip up. The recipe calls for ground beef, which adds a lot more flavor and decadence to the soup, but I wanted something a little lighter so I used ground turkey. The soup also includes celery, onion, shredded carrot, canned tomatoes, broth, dried herbs and spices and finished with fresh basil.
As a snack I made this red pepper goat cheese dip and ate it with celery and it is great!
