I had some zucchini I needed to use before it spoiled and zucchini noodles just did not sound appealing. I looked in the freezer to see what other options we had and there was a pound of ground pork. Bingo! Stuffed zucchini! You could use any kind of ground meat, but all we had on hand was lamb or pork. To make the filling I browned the pork and added spices and seasonings, Boursin and parmesan cheeses and added to hollowed-out zucchini then baked and there you have it, a simple meal is done.
