Batch Cooking

I don’t usually do batch cooking because eating the same meal more than twice in a row does not sound appealing to me, but I thought why not give it a try. I know people usually do batch cooking on a Sunday so they are set for the week, but I am a little behind schedule after the holiday weekend. At least when you do your batch cooking on a Wednesday you will be set for the weekend, when it is easy to get off track, especially if you have many foods you need to stay away from for health reasons. Today I made, chicken salad, Yumm bowls, treats for Gibbs and a new batch of fruit rollups. In addition I washed all my produce that was not pre-washed and packaged and it is ready to go. This makes for easy lunches to grab and go when Ken is out the door in the morning or I am at home and don’t want to cook.

Chicken Salad made by simmering 1 lb chicken for 15 minutes in salted water with bay leaves, then shred. Add 8 stalks chopped celery and 1/2 thinly sliced red onion. Dressing is made with 6oz plain yogurt and seasoned with sea salt, celery seed, lemon zest, and thyme. Mix all together in a bowl then serve with lettuce leaves, crackers, bread, or by itself.
