Happy Fall!

I could not be more glad summer is officially over since it was a difficult transition for us spending the summer in Arizona. In celebration of fall, we made acorn squash. I roasted the squash in the oven for 20 minutes cut side down at 400°, then turned them over and put minced garlic, olive oil, salt and pepper and continued to roast for another 30 minutes. I topped Ken’s with some leftover buffalo meat mixture from our Cuban bowls the other day and added some pepper jack cheese. We also experienced a frightening type of wildlife on our evening walk yesterday- a bobcat, and just across the street from us! The other day I came face to face with two hawks perched on a stone fence which made me give a little yelp. So much wildlife right in the city limits here…it is taking some adjusting to get used to seeing these creatures everywhere.





We are on our way to completing the house projects so we can finally move in! Here are some shots of the new paint color, which in some light looks more blue than grey.
