On my morning walk with Gibbs I was admiring all the Halloween decorations at houses, and came across and especially decked out house. Seeing all this fall spirit inspired me to do some fall cooking today.
I aso made a stuffed butternut squash to have ready-made meals going into the weekend since there are so many house chores to do and so little time on weekends. We really like butternut squash but it is such a pain to cut it, remove seeds, peel it and cube it, so I went a simpler route and just stuffed it so the flesh would be tender to eat along with the filling. The filling is made of some salt and pepper pork sausage links, black rice, garlic, onion, cranberries and sage. In retrospect He filling looks a little spooky like ants so it definitely fits in with the Halloween theme.
