Ken typically hates red onion and the only way he’ll eat it is if it’s pickled. He loves the red onions served at McMenamins, so one day I set out to use my leftover onion in a way so it wouldn’t go to waste. I looked at many pickling recipes and settled on this one from Bon Appetit. It’s simple and delicious. Having pickled onions on hand is a great way to elevate your homemade sandwiches, salads, tacos, the list goes on…Since I had almost an entire onion leftover from the curried chicken salad I made I quickly pickled it this morning so I could use it in my lunch.
