Low Carb Mexican 

Ken and I have been craving Mexican food so we made some today. We had Mexican cauliflower rice and ground turkey taco meat. Use these to assemble bowls and top with salsa, cheese, olives, sour cream, or whatever else sounds good to you and you have a healthy low carb meal! 

I seasoned the ground turkey with a salt free seasoning made of chili powder, paprika, garlic powder, onion powder, cumin, cayenne pepper and a black peper blend from Penzeys. 

The Mexican cauliflower rice was super simple but a little labor intensive since my food processor broke a while ago and we (Ken) had to use a cheese grater to rice the cauliflower. Thanks Ken!

First up we sautéed half an onion with three cloves minced garlic and a tablespoon of hatch chilies. 

Once the garlic is fragrant, add half a cup of tomato sauce, 1 tsp cumin, 1 tsp coriander, 1/2 tsp paprika and a sprinkle of sea salt. After everything is mixed together we added the riced cauliflower and about 2 c diced bell peppers. 

Cook until cauliflower is tender, about 10 minutes.

Then assemble your bowl!
