Cheesy Stuffed Zucchini


  • 3 medium zucchini
  • 4 ounces garlic and herb Boursin cheese
  • 2 tbsp Parmesan cheese
  • 1 lb ground pork
  • Salt and Pepper to taste
  • Pinch of red pepper flake
  • Pinch of Italian seasoning


Preheat oven to 350°

Brown ground pork and drain fat. While pork is cooking, cut zucchini in half lengthwise and hollow out so there is at least 1/8″ flesh of zucchini left. Place hollowed-out zucchini on baking sheet. Once pork is cooked and fat has been drained, add seasonings and Boursin cheese. Fill each zucchini half with pork and Boursin mixture and then sprinkle 1 tsp of Parmesan on each. Bake for 30 minutes.
