Makes 8 2-oz meatballs or 16 1-oz meatballs
- 1 lb organic grass-fed and finished ground beef
- 1/4 c almond meal (great substitute for bread crumbs)
- 2 cloves garlic, minced
- 1/4 c fresh parsley, chopped
- Salt and pepper
Mix all ingredients together by hand. Do not over mix. Using a 1/4 c measuring cup form into a ball for 2-oz size, or divide portion in half for 1-oz size. Repeat until all the meat mixture has been portioned out.
